Baba Wendy's Borscht by Kim Mackie


Ingredients

  • 3 quarts (12 cups) of chicken or beef stock

  • 1 medium onion, chopped

  • 3 medium potatoes, diced

  • 4-6 medium beets (& tops), shredded

  • 1/2 - 3/4 cups of vinegar

  • 2 cloves of garlic

  • 2 tbsp of dill

  • salt & pepper to taste

  • optional - 1 cup of dry white beans or 1/2 cup of dry split peas


Instructions


- boil beets until tender, let cool and remove skin, shred

- chop beet tops & onions, dice potatoes, mince garlic

- In a soup pot add all ingredients, bring to a boil then simmer till veggies are tender


You can add a dollop of sour cream and fresh dill.
