Baba Wendy's Borscht by Kim Mackie
Ingredients
3 quarts (12 cups) of chicken or beef stock
1 medium onion, chopped
3 medium potatoes, diced
4-6 medium beets (& tops), shredded
1/2 - 3/4 cups of vinegar
2 cloves of garlic
2 tbsp of dill
salt & pepper to taste
optional - 1 cup of dry white beans or 1/2 cup of dry split peas
Instructions
- boil beets until tender, let cool and remove skin, shred
- chop beet tops & onions, dice potatoes, mince garlic
- In a soup pot add all ingredients, bring to a boil then simmer till veggies are tender
You can add a dollop of sour cream and fresh dill.
