Fresh Garden Tomato Sauce

INGREDIENTS
6 to 8 cups of peeled, seeded and diced tomatoes
2 tablespoons of olive oil
4 cloves of chopped garlic
pinch of red pepper flakes
1 1/2 teaspoons of kosher salt
black pepper, to taste
3 tablespoons of chopped fresh basil
parmesan
INSTRUCTIONS
to peel the tomatoes, bring a large pot of water to boil
slice tomatoes on the bottom of each tomato
drop tomatoes in boiling water for 1 to 2 minutes, or until the skin cracks
quickly remove from water and let tomatoes cool enough to handle, the skin will come off easily
dice tomatoes or leave chunky, your preference
heat oil in pot over medium heat, add oil when hot and saute
add pepper flakes, stir in tomatoes and season with salt and pepper
partially cover over low heat for 20 to 25 minutes
add fresh chopped basil and remove from heat. Add parmesan
This recipe can be double or tripled for freezing to enjoy this fresh sauce in the off season.
